Courgette and Carrot Fritters


  • 1 medium/large courgette
  • 1 medium/large carrot
  • 1 large organic egg
  • 2 tablespoons of GF flour
  • 1 teaspoon cumin powder
  • Season with pepper to taste
  • Grated cheese/parmesan if desired
  • Coconut Oil for frying


  • Grate courgette and carrot.  
  • Squeeze water from courgette using kitchen roll
  • Add ALL of the ingredients into a glass bowl
  • Mix thoroughly together
  • Heat enough oil to just cover the bottom of a large frying pan, over a medium-high heat. When the oil is heated, drop in heaped tablespoons of the courgette mixture, flattening them with the back of the spoon to make fritters. Fry each one for a few minutes, or until golden-brown on each side.

Delicious with a colourful salad and dollop of humous!
