Ingredients
- 1 medium/large courgette
- 1 medium/large carrot
- 1 large organic egg
- 2 tablespoons of GF flour
- 1 teaspoon cumin powder
- Season with pepper to taste
- Grated cheese/parmesan if desired
- Coconut Oil for frying
Method
- Grate courgette and carrot.
- Squeeze water from courgette using kitchen roll
- Add ALL of the ingredients into a glass bowl
- Mix thoroughly together
- Heat enough oil to just cover the bottom of a large frying pan, over a medium-high heat. When the oil is heated, drop in heaped tablespoons of the courgette mixture, flattening them with the back of the spoon to make fritters. Fry each one for a few minutes, or until golden-brown on each side.
Delicious with a colourful salad and dollop of humous!
