Elderberry Syrup

    Elderberries are high in vitamin C and full of antioxidants, making them the perfect remedy for colds and flus.

    Most shop bought syrups are full of added nasties which counteract the benefit of the elderberries.

    Instead, make your own with this delicious recipe that can be adapted to suit your taste and needs.

    Ingredients

    200g dried elderberries

    700ml water

    200g raw honey*

    1 cinnamon stick

    * Substitute raw honey for maple syrup or coconut sugar if preferred

    Method

    Place the dried elderberries, water and cinnamon stick in a pan on medium heat for approximately 1 hour or until the liquid has reduced by half.

    Remove and cool to a luke-warm temperature and strain the liquid through a sieve, using the back of a spoon to squeeze out any excess juice from the berries. A muslin bag can be used if preferred.

    Mix in the raw honey or sweetener of choice and seal in a glass mason jar. The syrup will last for approximately 3 weeks if stored in the fridge.

    Take one tablespoon a day throughout the winter season for maintenance and up to 3 times a day to aid recovery.
